This recipe can be reduced as required, and freezes well if you do want to save some for another day. When you re-heat it, add a small amount of extra virgin olive oil to help separate the pasta. | | Ingredients | | 6 Tablespoons Butter 1/2 Cup Finely Chopped Onion 6 Cloves Garlic , Coarsely Chopped 1 Cup Chicken Stock (see my recipe for chicken stock if you want home made) 2 Tablespoons Chopped Fresh Rosemary 1 (16 ounce) Package Spaghetti 1/4 Cup Grated Parmesan Cheese Salt and Pepper To Taste
| | Directions | | Step: 1 | Melt 4 tablespoons of butter in a large saucepan over low heat. Add the onions; cook and stir until they turn a deep brown, about 10 minutes. Stir in the garlic, and cook for 2 minutes, you should be able to smell the oils leaking out. Mix in the chicken stock and rosemary, and increase the heat to medium-high. Cook until reduced by 1/3, about 8 minutes. | | Step: 2 | Meanwhile, bring a large pot of salted water to a boil. Add the spaghetti, and cook until tender, about 8 minutes. Drain, then add noodles to the sauce in the pan. Stir in the remaining butter and Parmesan cheese. Season with salt and pepper | | Step: 3 | Garnish with extra cheese and rosemary sprigs |
