| Introduction |
| One Christmas a friend commented that she missed the old timey pecan fudge that her Grandmother used to make every holiday. The recipe passed away with Grandma. Armed with a good description of the flavor and texture, I set to work to duplicate it. My friend was delighted and said that mine was so close to her Grandmothers it was scarry. |
| Ingredients |
| 1 7 oz jar marshmallow_creme 1 11 oz package white_chocolate chips 3/4 cup butter (1 1/2 sticks) 1 cup packed dark brown_sugar 2 cups granulated_sugar Pinch salt 2 tsp vanilla_extract 1 cup roughly chopped pecans I small can (5 oz) evaporated_milk |
| Directions |
| Step: 1 | Place the jar of marshmallow cream in a bowl of hot water to loosen it up. Place the white chips in a microwave safe bowl and heat on low (power 3) for 2 minutes, until just starting to melt. Set aside and keep warm. Chop nuts and place in a bowl. Measure vanilla into a small dish. |
| Step: 2 | In a large, heavy 3 qt saucepan, combine milk, butter, sugars and salt. Bring to a boil over medium high heat, stirring constantly. |
| Step: 3 | When the mixture comes to a full rolling boil, cook, stirring constantly for 4 minutes. Remove from heat, add vanilla and marshmallow cream and mix well. Stir in white chocolate mixture and nuts, mixing well. |
| Step: 4 | Pour into a buttered 8 1/2 x 8 1/2 inch pan. Cool completely before cutting into squares. Store in a tin or airtight container. Note: White chocolate has a higher melting point than regular chocolate. Melting slightly before adding to the fudge ensures that it all melts completely. |
