Introduction
	My Mom made the best macaroni salad. It has always been my favorite and brings back memories of holidays and family gatherings. I think mine is as good as my Mom's was. Mom you taught me well.
Ingredients
	1 1/2 cups salad macaroni, (ditali pasta in Italian) elbows or shells 4 hard boiled eggs 2 dill_pickles , diced 3 celery ribs, diced 1/4 cup diced red onion 1/4 cup minced flat_leaf_parsley 1/2 cup sliced black_olives , drained 1/4 cup diced pimentoes ,drained 1/4 tsp seasoned_salt 1/4 tsp celery_seed 1/4 tsp white pepper 1/2 tsp onion_powder About 1/2 cup mayonnaise or to taste
Directions
Step: 1	Boil eggs and cool. Cook macaroni in plenty of salted water,about 7 minutes. Drain but do not rinse.
Step: 2	In a large bowl, combine olives, pimento's, pickle, celery, onion, parsley and seasonings. Add macaroni. Peel and dice the eggs and add to the bowl. Add mayo and mix well.
Step: 3	Taste and add salt if needed. Transfer to a serving bowl and sprinkle the salad with paprika if desired. Chill at least 1 hour before serving.

I just made you and your mom's macaroni salad and I have to say Yes! I agree, it is the best macaroni salad I have tasted in a while. Compliments to you and your mom. :)

My daughter Erica is here for the weekend and asked me to print this recipe out for her to take home! Erica has been talking about her grandparents lately and it made her think of the wonderful macaroni salad my Mom always made. Erica has been very interested in cooking lately, watching The Food Network and helping cook at her group home (Non medical residential placement to be politically correct haha) So yes food can invoke memories, hopefully good memories.
