Introduction
	This is an easy salad that my Mom often made, especially for barbecues. It's wonderful with fresh corn on the cob.
Ingredients
	1/2 cup cider_vinegar 3 Tbsps water 1/4 cup extra_virgin_olive_oil Salt and freshly ground black pepper to taste 2 Medium sized cucumbers, peeled and sliced 1 large red or white onion , peeled and sliced into rings
Directions
Step: 1	Place cucumber and onion slices in a shallow bowl. In a small bowl, mix together vinegar, oil , salt, pepper and water. Pour over the vegetables and gently toss to coat evenly. Chill before serving.
