Introduction
With this easy recipe you are sure to impress your guests.
Very few ingredients for a fully satisfying dish.
Ingredients
3/4 Lb Fusilli pasta.
1/2 onion , minced
3 small artichokes ( not the great big hard one's, smaller are more tender)
4 Tbs Extra_virgin_olive_oil
2 garlic_cloves , minced
1 can  (8oz) tomato puree
2 Tbs minced parsley
Juice of one lemon
Salt
Directions
Step: 1Wash artichokes and remove though outer leaves.
Cut artichokes in half lengthwise and remove any blossom material. Rinse and  slice into thin strips. Place them in cold  water with the lemon juice for  5 minutes.
In a saucepan, sautee garlic and onion until translucent.
Carefully drain artichokes, and add to the saucepan.
Add salt to taste and cook for 10 minutes.
Add wine, let alchool evaporate, and add tomato puree.
Cook for 15 minutes, add parsley and keep cooking for other 5 minutes.
Step: 2Meanwhile, bring plenty salted water to a boil and cook pasta al dente, according to package directions.
Drain,  add sauce and serve.
