I couldnt stop eating the filling while I was rolling the pastry! | | Ingredients | | 1 Double Crust Pie Crust For a 9 Inch Pie 1 Medium Onion , Diced 4 Cloves Garlic , Chopped 2 Sprigs Rosemary , leaves stripped and chopped Juice of 1 lemon 2 1/2 Cups Cooked Salmon , skin and bones removed 1/2 Cup Cubed Hard Mature Cheese (A Basic Mature Cheddar Will Do) 1 Cup Hollendaise Sauce 1 Egg, Beaten | | Directions | | Step: 1 | Place onion, garlic, rosemary, lemon juice, salmon, cheese and hollendaise sauce in a bowl and mix until salmon is flaked and everything is mixed thoroughly. (When juicing the lemon, hold it upright so that the seeds dont go into the dish). | | Step: 2 | Grease pie dish and roll pastry. Place bottom pie crust in the dish and prick the bottom so that the pastry doesnt go soggy.
Spoon filling into crust. | | Step: 3 | Top with second crust and brush with a beaten egg. Cut slight holes in the top crust to help air escape. | | Step: 4 | Bake in a pre heated oven on 200C ( 400F) for 30 minutes or until golden brown on top. |
