Introduction
This is a traditional very spicy beef stew from Eritrea.
It's often served over 'Injera' a flat bread made with wheat and corn flour.
I used flour tortillas with a very good result.
Ingredients
1 onion minced
2 garlic_cloves , miced
1 Tbsp clarified butter
3 Tbsp berberè
1 cup water
1 lb peeled tomatoes
1 lb beef cut in bite size chunks
Salt
Directions
Step: 1Saute onion and garlic in a large covered pan over medium heat for 5 minutes.
Add  clarified butter,  berberè, a pinch of salt  and 1/2 cup water.
Let reduce for few minutes, and then add tomatoes. Simmer  for 15 minutes adding a bit more water if necessary.
Add beef and cook for about one hour on low heat,  until meat is done and sauce is thickened.
Serve over tortillas.
