Introduction
This easy salad packs a big nutritional punch. Serve as a main course or with grilled meats, it's a great way to get your family to eat more grains.
For vegeterian diets, simply omit the prosciutto.
Ingredients

Sea_salt
Freshly ground black pepper
1/4 cup lemon juice
2 tablespoons extra_virgin_olive_oil
2 tsps capers , rinsed and minced
1/2 cup raw diced carrots
2 medium sized shallots , peeled and sliced
4 cups cooked and cooled barley (follow package directions)
1/4 cup thick sliced prosciutto , diced
1/4 cup pine nuts, toasted and roughly chopped if desired
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh basil leaves
2 celery ribs, diced
1 large tomato , deseeded and diced
2 tablespoons chopped fresh parsley leaves
1 cup pitted and split gaeta_olives
1 Red bell_pepper , diced
Directions
Step: 1In a small bowl, whisk together the lemon juice and a pinch of sea_salt. Add the olive oil and whisk to combine. Set aside.
Combine the remaining ingredients in a large mixing bowl. Add the dressing and stir to combine. Season to taste, with the salt and pepper. Best served at room temperature.
