Easy Crunchy Granola Bars

Introduction
Tuck these sweet, crunchy and nutritious bars into lunch boxes, brief cases and back packs for a great afternoon pick me up or dessert. You can play with the fruits and nuts to suit your taste, but remember to keep the wet and dry ingredients in proportion or the bars will fall apart.
Ingredients


2 cups old fashioned rolled_oats
3/4 cup packed light brown_sugar
1/2 cup wheat_germ or oat_bran ( or 1/4 cup of each)
3/4 teaspoon ground cinnamon
1/2 cup whole_wheat_flour
1/2 cup all_purpose_flour
3/4 cup raisins ,dried cranberries or your choice of dried mixed fruits ( I like Mariani's dried fruit bits)
1/2 cup slivered or sliced almonds , chopped walnuts , whatever nuts or seeds you like best.
3/4 teaspoon salt
1/2 cup honey
2 Tbsps molasses
1 large egg, beaten
1/4  cup vegetable_oil
1/4 cup melted butter ,cooled
2 teaspoons vanilla_extract

Directions
Step: 1

Preheat the oven to 350 degrees F (175 degrees C). Generously butter a 9x13 inch baking pan.
In a large bowl, mix together the oats,  wheat germ or oat bran, flours, fruits , nuts and coconut.

Step: 2In another bowl combine the honey, molasses, brown sugar,egg,cinnamon, salt, butter, oil and vanilla. 
Step: 3Pour the wet mixture over the dry mixture and mix well, using your hands if needed.. Press the mixture lightly and evenly into the prepared pan.
Bake for 30 to 35 minutes, until the bars are golden brown at the edges. Cool for 5 minutes, then cut into bars while still warm. Very important to cut while warm or the bars will crisp up and then are impossible to cut. Store in an air tight container.

These are good. I think I might miss out the molasses next time though and just add in extra honey. Mine ended up darker than the ones in the picture, but they still turned out well. I'll be taking some to work in the morning for my snack :-)
