| Introduction |
| This quick and easy cobbler is pure comfort food. Cobblers are a southern favorite. My Mom made hers with a pie crust, but I prefer the biscuit type.
Serve this cobbler warm with a dollop of whipped cream or a scoop of good vanilla ice cream. |
| Ingredients |
| 4 cups peeled, sliced peaches * ( I love making this with white peaches)
2 cups granulated_sugar
1/2 cup water
1/2 cup butter (1 stick)
1/2 tsp almond_extract
1/2 tsp vanilla_extract
1 1/2 cups self_rising_flour
1 1/2 cups milk
1/2 tsp ground cinnamon mixed with 1 Tbsp granulated_sugar |
| Directions |
| Step: 1 | Preheat oven to 350 degrees F.
Combine 1 cup of the sugar, and water in a saucepan and mix well. Bring to a boil, add peeled peaches and simmer for 10 minutes. Remove from the heat. |
| Step: 2 | Put the butter in a 3-quart baking dish and place in the oven to melt.
Mix the remaining 1 cup sugar, flour, and milk slowly with a whisk to prevent lumps. Pour mixture over melted butter. Do not stir. Spoon the peaches over the batter, using a slotted spoon. |
| Step: 3 | Add the vanilla and almond extracts to the syrup. Slowly pour the syrup over the peaches. Sprinkle the cinnamon sugar mixture over the peaches and syrup. The batter will rise to the top during baking.
Bake for 30 to 45 minutes.
* To peel peaches easily, bring a 2 quart saucepan of water to a boil. Have ready a bowl of ice water. Place two to three peaches at a time in the boiling water. After one minute, remove the peaches with a slotted spoon to the ice water. The skins should slip off easily. Repeat with remaining peaches. |
