Easy Beef Bourguignon, Crock Pot Method

Introduction
When I'm cooking dinner one evening, I often put this together and pop it in the fridge for the next nights dinner. In the morning I put the crock in the base, turn it on and forget about it until dinner time.
Ingredients
6 strips of bacon or 12 bacon ends, cut into 2 inch pieces
3 lbs beef rump roast or lean stew beef cut into 1-inch cubes
3 large carrots , peeled and sliced 1 inch thick
1 medium onion , sliced
1 tsp sea_salt
1 tsp paprika
1/2 tsp freshly ground black pepper
3 Tbs flour
1 1/4 cup  beef_broth or stock
2 cups Burgundy wine or other full bodied red wine
1 Tbs tomato_paste
2 cloves garlic , minced
1/2 tsp whole thyme
1 whole bay leaf
1/2 lb small white onions , peeled ( cipollini are great)
2 shallots , peeled and sliced
1 lb mushrooms, either button or crimini, quartered
1/4 cup minced flat leaf parsley
Directions
Step: 1Remove beef from  the fridge at least 30 minutes before starting this dish, as cold meat does not brown well.
Combine flour, paprika, salt and pepper. Toss beef cubes in the flour mixture.
In a heavy skillet, cook bacon until crisp. Remove the bacon to a plate, set aside.
Step: 2Add beef to the bacon fat and brown well. Add the remaining flour  and sliced onions to the pan with the beef and cook until flour is a nutty brown, about two minutes, stirring constantly.
Step: 3Place browned beef and flour mixture into crock along with the carrots. Add broth to the crock. and mix well Add cooked bacon, wine, tomato paste, garlic, bay leaf, parsley,whole onions, shallots and mushrooms. Cover and cook on Low 10 to 12 hours or on High for 5 to 6 hours.
