| Introduction |
| This soup is a dieters dream, just leave the butter and cream out. It's delicious either way. Serve as a first course or a meal with a salad and bread. This soup lets the fresh broccoli flavor shine. This method also works great with cauliflower or carrots. |

2 pounds fresh broccoli , rinsed , bottom end removed and chopped in large pieces 1 1/2 quarts regular strength chicken_broth (I use the carton type) 1/2 tsp white_pepper 1 Tbsp lemon zest Salt to taste 2 Tbsps butter 1/4 cup heavy cream (optional) |
| Directions |
| Step: 1 | In a large pot, bring the chicken stock and white pepper to a boil. Add the broccoli, turn down the heat to a simmer and cook until just tender but still bright green. |
| Step: 2 | Drain the broccoli in a colander over a saucepan to catch the broth. Place the broccoli in a blender in batches if neccesary, with enough of the broth to help the mixture puree smoothly. Pulse until the broccoli is smooth. |
| Step: 3 | Return the pureed broccoli to the broth. Add the butter, lemon zest and heat just until until hot over medium heat. Add salt to taste. Remove from the heat and add the cream if using. |
