Last August when Guido was here, I made Crab Louis  for dinner one evening. Guido loves crab and the weather was so hot that a cool meal was in order.

1/2 pound lump crabmeat or crab legs, shelled and the meat kept in bit sized pieces
2 eggs, boiled,cooled and quartered
8 medium button mushrooms, sliced
8 green_onions , sliced (white and green part)
1 Medium head romaine lettuce , washed , outer leaves stripped, dried and torn into bite sized pieces
1 tomato , cut into 8 wedges
4 radishes, sliced
2 lemon wedges
Cheese and garlic croutons

Dressing

1/2 cup each mayo and chili sauce
1/4 tsp garlic_powder
1 Tbsp sweet pickle relish
Pinch salt
1 tsp olive_oil
Pinch cayenne_pepper
Directions
Step: 1Arrange half of the lettuce on each of two plates. Arrange tomato wedges and boiled egg quarters around the edges of plates. Scatter green onion, mushroom slices and radish slices over lettuce. Arrange crab meat over the salads. Place a lemon wedge in the center of each
salad.Cover and refrigerate salads while you prepare the dressing.
