Introduction
Quick meals don't have to be plain meals. Many authentic Italian sauces contain only a few key ingredients, but their simplicity and freshness create amazing flavors. In the time you can stop and buy greasy fried chicken, you can pick up the fresh ingredients to make a wonderful Italian meal thats also healthy. Many of the ingredients are already in your kitchen.Grab salad ingredients and a loaf of crusty bread, a nice bottle of wine and your family will think you slaved all day!
Good pasta is key, I like Barilla or DeCecco.
This is a simple sauce I make when I want a quick and delicious meal.
Ingredients

4 servings penne , ziti, tortellini, cheese raviol..whatever you like best
1/2 cup oil packed sun dried tomatoes
1 tsp capers , rinsed
8-10 large basil leaves
1/2 tsp sea_salt
Pinch of red_pepper_flakes
Freshly ground black pepper
Parmesan , shredded
Directions
Step: 1Start the water for the pasta, add a handful of coarse sea_salt.
Chop the tomatoes, basil and capers. Heat a deep skillet over medium heat and add the tomatoes, basil and capers. Saute a few minutes until hot.Add the salt and pepper and red pepper flakes.Add a little of the oil from the tomatoes and stir to combine. Remove from the heat. Drain the pasta and add to the sauce, tossing well to coat the pasta.
Step: 2Thats it, the longest cooking thing is the pasta! Toss some cubed fresh mozzerella and cherry tomato halves with some butter lettuce, sea salt and olive oil for a salad, slice up the bread and pour the wine. pass  the cheese and dinner is served...mangia!
