Introduction
Risotto with artichokes is another staple in Italian cuisine. There are infinite variations of this recipes so I chose the simplest. 
Very few ingredients for a quick complete meal in one dish.
Ingredients
3/4 Lb  Arborio_rice  (or if you can find it, Carnaroli rice)
4 small to medium sized Artichokes
1 small white onion , minced
1 Tbsp minced parsley
1 stick butter , divided
1/4 cup dry white wine
4 cups chicken_broth , or half chicken and half beef, or all vegetable broth
Juice of one lemon
1 Tbsp Extra_virgin_olive_oil
2 oz grated Parmigiano_reggiano
Salt and  freshly ground black pepper to taste
Directions
Step: 1Clean artichokes and remove tough outer  leaves and  half of the stem.
Cut into wedges,  remove the inner beard (choke) and soak in water with some lemon juice added. (1/2 cup lemon juice to 4 cups water)
Step: 2In a large, deep casserole, saute minced onion with half of the butter and extra virgin olive oil until translucent.  Add drained artichokes and parsley to the onion. Season with salt and pepper and let cook. covered, for 10 minutes stirring occasionally.
Step: 3Increase heat, add rice and cook for 2 minutes strirring constantly.  Add wine and stir constantly until the wine evaporates.  Reduce heat again and start adding broth in batches, stirring constantly until rice is done (10-12 minutes)
Remove from heat,  add the rest of the butter and  parmigiano reggiano, stir well and serve.
