In Italy, they use Parmalat, a cooking cream in a shelf stable container. It's thick, so you may need to play with the amount of regular fresh cream to get the desired consistency.
| | Directions | | Step: 1 | In a large bowl (must be large enough for the pasta also) work the butter with cream and lemon juice until you get a soft cream. Add the hot pasta Season with salt and pepper, and add the minced herbs. | | Step: 2 | Meanwhile, bring plenty of salted water to a boil: cook pasta al dente, according to package. Drain and pour pasta into the bowl with the lemon sauce. Toss carefully to coat all the pasta and serve. |
