Introduction
This is a nice salad in the Italian tradition.  In Italy, most salads are dressed with olive oil only, and it must be cold pressed unfiltered for the best flavor. This salad makes a nice light meal with some good bread and fresh fruit for dessert.
Ingredients


I head romaine lettuce , rinsed, outer leaves stripped off, and torn into bite sized pieces
3 Tbsps shredded parmesan cheese
6 oz fresh mozzerella cheese, cut into bite sized cubes OR 1 cup mini mozzerella balls
10 large basil leaves, rolled and sliced
2 medium tomatoes , cut into wedges OR 2 cups grape tomatoes
Sea_Salt and freshly ground black pepper
1/4 cup extra_virgin_olive_oil (cold pressed unfiltered is best)
Croutons (optional)
Directions
Step: 1Dry lettuce in a salad spinner or gather in a clean cotton dish towel and twirl to spin off water.
In a large salad bowl, combine romaine, tomatoes, basil and cheeses. Add olive oil and toss. Season with salt and pepper.
