Introduction
I sometimes have trouble getting my daughter to eat her dinner, she can be really fussy at times! I came up with a few recipes that are so easy my daughter helps me make them, they can be frozen and re heated later. They taste great!
Ingredients

4 Chicken Drumsticks
2 Teaspoons Olive Oil
1 Teaspoon Soy Sauce
1 Tablespoon  Smooth Peanut Butter
1 Tablespoon Ketchup

Small Baked Potatoes and corn to serve

Directions
Step: 1Pre heat oven to 200 C (400 F) and line a small shallow baking tin with foil. Rinse the drumsticks under cold water, pat dry and peel off the skin. Make 3 or 4 slashes in the meat and place on the tin.
Step: 2Blend the remaining ingredients and spread thickly over the top of the chicken drumsticks. Cook in the oven for 15 minutes.
Step: 3

Turn the drumsticks over and baste with any peanut butter mix that has come off, and any meat juices.Cook for a further 20 minutes or until the juices run clear when the chicken is pierced with a knife.

Step: 4Cool slightly then wrap a small piece of foil around the base of each drumstick. Arrange on plates and serve with small baked potatoes and corn.
