Introduction
This is another easy recipe that my daughter helped me make. Because she helped, she was so much more interested in eating it! My pots / rammekins were smaller than the ones i would have liked to use, so this made 3 servings. This was plenty for my daughter, but if your child has a bigger appetite, then use bigger rammekins and make 2 servings.
Ingredients

1/2 a Small Onion
6 oz Quorn Mince *
2 Teaspoons All_Purpose_Flour
2 Tablespoons Ketchup
2/3 Cup Beef_Stock / or 1 Beef Stock Cube Mixed With 2/3 Cup of Water
Pinch of Mixed Herbs
2 oz Swede (Rutabaga)
1/2 A Small Parsnip
1 Medium Potato
2 Teaspoons Milk
1 Tablespoon Butter or Margerine
1/2 Carrot (to serve)
3 Tablespoons Peas (to serve)

*Paula tells me that Quorn mince is a vegeterian ground beef alternative that she uses for her daughter. Regular ground meat can be substituted if desired or your favorite vegeterian ground meat alternative.

Directions
Step: 1

Pre heat oven to 190 C / 375 F. Finely chop the onion and place in a small pan with the Quorn. Dry fry over a low heat until it looks cooked.

Add the flour, stirring, then the ketchup, stock and mixed herbs. Bring to the boil, cover and simmer for 30 minutes. Stir occasionally.

Step: 2

Meanwhile, chop the swede, parsnip and potato, and cook for 20 minutes or until soft. Drain.Mash with the milk and half of the butter.

Step: 3

Spoon the Quorn mixture into 2 or 3 rammekins. PLace the mashed vegetables on top, fluff with a fork and dot with the butter.
Place on a baking sheet and cook for 25-30 minutes until browned on top and bubbly.

Step: 4Peel and thinly slice the carrot lengthways. Stamp out shapes with petit fours cutters. Cook in a pan of boiling water with the peas for 5 minutes. Drain and serve with the Shepherd's Pies.
