Introduction
My daughter loved this, the idea of eating crisps for dinner was great to her! So easy to make and tastes fantastic!
Ingredients

1 Celery Stalk
2 Tablespoons Corn
2 Tablespoons Mayonnaise
1/2 Teaspoon Ground Coriander
3 oz Cold Cooked Chicken
1/2 cup Plain Crisps (Potato Chips)
1 Tablespoon Grated Red_Cheese or other mild cheddar_cheese

Good with Peas and Broccoli

Directions
Step: 1Pre heat oven to 220 C / 425 F. RInse the celery, slice thinly and place in a bowl with the corn, mayonnaise and ground corriander. Dice the chicken and add to the bowl. Mix well.
Step: 2Spoon into a shallow ovenproof dish and level the surface.
Step: 3Roughly crush the crisps and sprinkle over the chicken. Top with the grated cheese and cook for 10 minutes or until bubbly.

Just because I am a spoiled kid, can I use Red Windsor (Bordeaux wine cured cheese) ? *grin*
