Introduction
This is a very common dish here in Italy for the Easter lunch.
It's very easy and also quick to prepare. 
The breadcrumbs will get a golden color, hence the name.
Ingredients
2 lbs lamb cutlets
2 eggs
11/2 cup dry breadcrumbs
Vegetable_oil for frying
3 Tbsp lard
5 sage leaves
Sea_salt and freshly ground black pepper
Directions
Step: 1Pound the cutlets to a uniform thickness. Dip the cutlets in the beaten eggs.
Dredge the cutlets in the  breadcrumbs with care to have a uniform coating.
Step: 2Heat the oil in a deep frying pan. Add the lard, sage leafs and then the cutlets. Turn the heat to low/medium and cook for about 5 minutes on each side, so that the meat  doesn't  become chewy.Season with salt and pepper only before serving.
Serve piping hot.
