Introduction
I love soft chewy molasses cookies. The honey helps them keep their moist texture. I need to make a batch and take a picture. That leads to many glasses of milk and ten more laps on my walks!
Ingredients
2 cups all_purpose_flour , sifted and then measured
2 tsp baking_soda
1/4 tsp salt
1 tsp ground_cinnamon
1/4 tsp freshly grated nutmeg (prefered)
1 tsp vanilla_extract
1 1/4 cups softened butter
1 cup dark brown_sugar , firmly packed
1 large egg
1/4 cup molasses
2 Tbsps honey
Directions
Step: 1Butter 2 large cookie sheets.
Preheat oven to 350 F

In a bowl,combine the flour, baking soda,salt, cinnamon and nutmeg, mixing to thorouthly blend. Combine butter, sugar, molasses, honey, egg and vanilla and beat until creamy. Add the dry ingredients to the creamed mixture and mix on medium speed for about 2 minutes. Scrape the bowl often.Dough will be soft.


Step: 2Wrap the dough in plastic wrap and chill for at least 1 hour.

Roll the chilled dough into 1-inch balls , roll the dough balls in granulated sugar and place 2 inches apart on the prepared baking sheet. Bake until the tops are set, 12 to 15 minutes. Cool on wire racks.

Step: 3Store these cookies in an airtight container when cooled completely.
