Introduction

I prepared this dish for dinner this evening to test out this recipe. It came out very nice, the fish was moist and flavorful. I used a 750 watt microwave with a built in turntable. I have to make this again because as usual I forgot to take pictures!

Ingredients

1 salmon steak, about 4 oz and 1 inch thick ( to cook two steaks, increase the cooking times to two minutes. Standing time is the same.)
1 Tbsp extra virgin olive oil
2 Tbsps dry white wine
Sea_salt
Freshly ground black pepper
1 tsp dill_weed
Fresh lemon wedges
Microwave safe plastic wrap.

 

Directions
Step: 1

Spray a glass microwave safe dish with non stick cooking spray. Pat the salmon steak clean with a damp paper towel. With a basting brush, brush both sides of the fish with the olive oil. Season the fish on both sides with salt and pepper.

Step: 2Place the fish in the dish and cover tightly with the plastic wrap. Poke one hole in the plastic to vent. Microwave on high for 3 minutes. Peel back the plastic, add the wine to the pan and sprinkle the dill over the fish. Recover the dish and microwave on high for two more minutes or until fish flakes easily.. Let the dish stand in the microwave for 2 minutes after the second minute. To serve, remove the skin if desired, plate the fish and drizzle the pan juices over it.

Menu suggestion
Before I started the fish, I sliced and steamed one medium sized one yukon gold potatoe. I finished them with fresh minced chives, butter and sea salt.
I also made some Carrots In Marsala
Fresh fuit rounded out the meal.
