Flambé Jumbo Shrimp

Introduction
If you stop by the fishmonger and you see some jumbo shrimp, don't miss the chance! Get a dozen and try this super fast and easy recipe.
I'm sure you will say a dozen were not enough!
Ingredients
12 whole jumbo shrimp
2 Tbsp light bodied oive_oil, sunflower or a delicate extra_virgin_olive_oil (Tuscan or Ligurian are examples of a light olive oil)
1/4 cup cognac
Directions
Step: 1Heat the oil in a large skillet.
Add the shrimp and cook until they turn pink, turning them once.
Step: 2Pour cognac in the pan and flambé!
Step: 3After the flame is gone, cook 1 more minute and serve.,
