Introduction
	This is a very nice and fresh summer dessert. I love apricots, and this is one of the favorites desserts of mine.
Ingredients
	1 lb large, ripe apricots 3/4 lb strawberries 2 oranges 4 oz sugar 1/4 cup prosecco wine (any sparkling white wine will do)
Directions
Step: 1	Wash, halve and remove pits from the apricots Grate the zest of an half of one of the orange Juice the oranges Dissolve the sugar in the wine and the juice of the oranges Put the apricots and the juice in a large saucepan and let cook on low for about 10 minutes Remove apricots from the saucepan and let cool
Step: 2	Carefully wash and hull the strawberries. Puree with an immersion mixer or a blender. Pour strawberries puree into the saucepan containing the poaching liquid from the apricots and let simmer on very low heat until reduced to a thick creamy sauce. If desires, lay the apricots on a dollop of sweetened whipped cream
Step: 3	Spoon the sauce over the apricots and chill in the fridge for at least two hours before serving.
