Pasta and Dried Bean Salad

Introduction
I get bored eating the same things over and over for lunch at work, so I came up with this. It's lovely and refreshing but filling too.
Ingredients
1 Cup Dried, Mixed Beans (soaked overnight)
1 Cup Dried Pasta
3/4 Cup Halved Cherry Tomatoes
1/2 Cup Chopped Cucumber
1/4 Cup Grated Carrot
1/4 Cup Balsamic Vinaigrette dressing
Directions
Step: 1Rinse beans and boil for 20 minutes.
Step: 2Cook pasta in salted water according to package directions.
Step: 3Drain pasta and beans, and allow to cool.
Step: 4Add all ingredients to a bowl and mix thoroughly.
Serve chilled.

Pasta and Dried Bean Salad
Melon chunks
Whole grain crackers.
Beverage

Place a few leaves of lettuce on the bottom of a plastic container. Spoon the salad over the lettuce and seal with the lid. I love the Ziplock containers, so many sizes!. Pack melon in a smaller container (make sure these all fit in your lunch box). Use a snack sized baggie for the crackers, add a fork and napkin, a frozen drink or an ice for lunch box's.
