| Introduction |
| I get bored eating the same things over and over for lunch at work, so I came up with this. It's lovely and refreshing but filling too. |
| Ingredients |
| 1 cup dried, mixed beans or a combination of your favorites. A can of cooked beans may also be used.
1 cup uncooked pasta, shells, bow tie or conchiglie as shown in the photo.
3/4 cup halved cherry tomatoes
1/2 Cup peeled and diced cucumber
1/4 cup grated carrot
1/4 cup balsamic vinaigrette dressing (you favorite bottled dressing or home made)
Sea_salt and freshly ground pepper to taste |
| Directions |
| Step: 1 | Soak beans overnight in cold water. Rinse beans and place in a 2 quart saucepan. Add water to the pan just until beans are covered. Add 1 tsp sea salt to the cooking liquid if desired. Cook for 20 minutes or until beans are tender. |
| Step: 2 | Cook pasta in salted water according to package directions. |
| Step: 3 | Drain pasta and beans, and allow to cool. |
| Step: 4 | Add all ingredients to a bowl and mix thoroughly.
Serve chilled. |

Pasta and Mixed Bean Salad
Melon chunks
Whole grain crackers.
Beverage
Place a few leaves of lettuce on the bottom of a plastic container. Spoon the salad over the lettuce and seal with the lid. I love the Ziplock containers, so many sizes!. Pack melon in a smaller container (make sure these all fit in your lunch box). Use a snack sized baggie for the crackers, add a fork and napkin, a frozen drink or an ice for lunch box's. |
