Introduction
I like spicy food, but generally end up eating the same things over and over if I make anything spicy. I came up with this based on a meal I had at a Mexican place in Milton Keynes once.
Ingredients
1 Pound Frozen Broad Beans
2 Tsp Olive Oil
1 Onion , Finely Chopped
2 Garlic Cloves , Finely Chopped
2 Chillies, De-Seeded and Finely Chopped
2 1/2 Cups Tomatoes , Chopped
Directions
Step: 1Boil broad beans for 20 minutes until soft, drain and keep covered.
Heat oil in a pan and sauté onion and garlic until onion is soft but not brown.
Step: 2Add tomatoes and cook until mixture is thick and juicy.
Step: 3Add chillies and cook for a further 2 minutes.
Step: 4Pour over the beans and warm through – stirring thoroughly.
Serve with tortillas.
