Introduction
This is a great recipe to use up leftover pork roast, chuck roast or baked chicken. You will never know the meat was leftover. Here I have shredded two boneless chuck roast that started on the smoker and finished in the oven.
Pile this on sturdy buns or rolls and enjoy.
Ingredients

1 1/2 cups ketchup
1/2 cup good quality cider_vinegar
1/2 cup brown_sugar , lightly packed
1 Large white onion , very thinly sliced.
1 tsp  garlic_powder
1  tsp onion_powder
1/2 tsp sea_salt or to taste
1/2 tsp freshly ground black pepper
1 tsp liquid_smoke or to taste
2 tsp Creole_seasoning
2 Tbsp butter
1 can beer (1cup)
Directions
Step: 1In a deep heavy skillet, melt the butter over medium heat. Add the onion and cook, stirring often until slightly translucent. Meanwhile combine all the sauce ingredient except the beer.
Step: 2Add the meat and the the beer and cook briefly.
Step: 3Add the sauce and mix well .Simmer until thick. Adjust seasonings to suit your personal preference. Pile on split rolls and serve.
