Introduction
These can be a bit tricky, and might need a little bit of practice. When you cook the rice, make sure it has soaked up all of the water, if you don't, the seaweed (nori) will fall apart. They are lovely though!
Ingredients
250g Uncooked Sushi Rice
2 Tbsp Rice Wine Vinegar
1 Tbsp Mirin
1 Tsp Castor Sugar
1 Tsp Salt
3 Sheets Nori (seaweed)

Fillings - you don't have to use all of these, just whatever you like really
Ham , Salami, Prawns, Tuna , Smoked Salmon , Cucumber.


Directions
Step: 1

Put the rice into a saucepan with 330ml water. Place the lid on top. Bring to the boil and simmer for 10 minutes - with the lid on.

Turn the heat off, and let sit with the lid on for 20 minutes.

Step: 2In a small bowl, mix the rice wine vinegar, mirin, caster sugar and salt. Add to the rice and stir thoroughly. Allow to cool.
Step: 3

Place a sheet of Nori on a bamboo mat and spread evenly with the rice. Add a filling a little off centre.

Step: 4

Roll up the bamboo mat, pressing lightly with both hands. Remove mat, and cut into 6 pieces. Repeat with the remaining ingredients.

Serve chilled with ginger and soy sauce.
