Introduction
	This marinade is great for red meat and game. Try it with wild boar. This marinade it's wonderful start for wild boar stew or ragù. As with many marinades, the recipe listed is a blue print. Add more or less of an ingredient to suit your taste and the amount of meat to be marinated.
Ingredients
	1 bottle of red wine. ( I would say Chianti) 1 cup red wine_vinegar 3/4 cup Extra_virgin_olive_oil 2 carrots 2 red onions 2 garlic_cloves 1/4 tsp whole leaf thyme 4 laurel leafs (bay leafs) 1 tsp sea_salt 1/2 Tbsp whole black peppercorns , or to taste
Directions
Step: 1	Slice carrots, onions and garlic, and divide in two parts put a fist layer of the mixed vegetables in the bottom of a big bowl. Add some thyme and laurel leafs and lay the meat over. Cover with a second layer of the vegetables, and the remaining laurel and thyme leafs. Sprinkle peppercorns over all and season with salt.
Step: 2	Mix wine, oil and vinegar, and pour gently over the meat. Let sit for at least 12 hours in a very cool place or in the fridge.
