Apple Shrimp

Introduction
This dish is usually made with an italian apple variety called "Renetta" but I think golden delicious or granny smith are also perfect candidates.
Ingredients
1 lb raw jumbo shrimp  (frozen is fine but fresh are much better)*
2 granny smith apples or any tart green apple.
5 to 6 celery stalks
2 carrots
Juice of half a lemon
4 Tbsp home made mayonnaise (prefered but good quality commercial mayo will do)
Sea_salt
* In Italy shrimp are always whole, so they refer to headless shrimp as shrimp tails. Here we call the tail the fins on the tip.
Directions
Step: 1Peel , core and dice apples
Peel and dice carrots
Carefully wash celery, discard leafs and dice stalks
Put apples, carrots, celery ,lemon juice and mayo  in a blender and process until you get a smooth velvety cream.


 
Step: 2Meanwhile  cook shrimp  in salted water for 5 minutes.
Arrange shrimp on a serving platter. Let shrimp cool to lukewarm before pouring the apple sauce over the shrimp.


Pinot grigio is the right wine for this dish.
Menu suggestion
This dish is usually served as a second course.
Serve fried calamari, clams saute, spaghetti with pesto as a first course or your favorite seafood recipe.
