Introduction

Some people have a knack for playing music after hearing it, well I have a knack for creating recipes. After tasting a raspberry bar at a small cafe, and not getting the recipe from the owner, I went home and made these.
I always make these for the holidays as everyone loves them and they look so pretty and festive on a cookie tray as a gift. I make double or triple the dough recipe and then make 3 different types of bars. Raspberry is my favorite, along with Strawberry and Blackberry, but you can use any kind of jam you like.

Ingredients

Filling
1 1/4 cups seedless Raspberry jam (or any flavor you like)
2 tablespoons lemon juice

Crust
2 cups all_purpose_flour
11/2 cubes cold butter , cut into pieces
1/2 cup granulated_sugar
1/8 tsp salt
1 teaspoon vanilla_extract

 

 

Directions
Step: 1

Combine jam and lemon juice in a saucepan and melt over low heat or place in a glass or ceramic bowl and microwave 1 minute on high, and stir to melt. Set aside while you prepeare the crust

Step: 2

For the crust

In bowl or food processor fitted with the cutting blade, process sugar about 30 seconds. Add flour and salt and process briefly to combine. Add butter pieces
and vanilla and process until the mixture is crumbly and fine.
Firmly press part of the dough mixture (reserve 3/4 cup for topping) into an 8X10 inch pan. Bake at 350 for 15 minutes. Spread jam mixture over crust and sprinkle remaining dough mixture over top.

Step: 3Return to oven and bake until topping is lightly brown and filling is set, about 20 minutes. Sift powder sugar over the top when cool if desired and cut into bars.
