| Introduction |
| I love candied sweet potatoes! I always make a big pan full so their will be leftovers. This dish can be made a day ahead of turkey time. |
| Ingredients |
| 4 medium sweet potatoes
3 Tbsp butter plus extra to top potatoes
1/4 cup honey
1/2 cup packed dark brown_sugar
Mini marshmallows (optional)

| Directions |
| Step: 1 | Preheat oven to 400F.
Scrub sweet potatoes, rub skins with vegetable oil and pierce skin with a fork.
Place the potatoes on a baking sheet and bake for 35 minutes or until the potatoes are barely tender. (still very firm).

| Step: 2 | While potatoes are baking, in a saucepan melt the butter with the brown_sugar and honeyover medium heat. Bring the syrup to a rolling boil, stirring constantly, and cook for five minutes. Remove from heat and set aside.
Peel the potatoes, slice about 1 inch thick and arrange in a single layer in a buttered casserole. Pour the syrup over the potatoes. Scatter a few small pieces of butter over the top of the casserole.

| Step: 3 | Bake at 325F for 40 minutes or until the potatoes are tender. Scatter mini marshmallows over the top the last 10 minutes of baking. |
