Fried Lobster Tails

Introduction
Everyone that knows me knows that I love lobster. Broiled and dipped in clarified butter, it's heaven. This recipe is a very tasty quick and very easy way to serve lobster.
Ingredients
1 to 2 8 ounce lobster tails
1/4 cup plus 1 Tbsp mayonnaise ,
1/4 tsp white pepper
1/2 tsp Old Bay's seasoning
1 tbsp lemon juice
2 cups fine dry breadcrumbs
Peanut oil for frying
Directions
Step: 1With a very sharp knife, cut the tails in half lengthwise. With fingers, separate the meat from the shell. Cut the meat in into 3-4 pieces. Try and keep the pieces the same size.
Step: 2Combine mayo, lemon juice, pepper and old bays in a bowl. Pour breadcrumbs into a shallow bowl.
In a deep frier or deep pot, heat the peanut oi. Use a fat thermometer if desired. Heat to deep fry temp or until a cube of bread brown very fast.
Step: 3Roll the lobster meat in the may mix and then roll in the breadcrumbs. Repeat with remaining pieces, placing each on a plate until all are coated.
Line a cookie sheet with absorbent paper.
Step: 4Drop several pieces of lobster in the hot oil .With a slotted spoon or a spider, quickly flip them over so the cook on all sides. Cook intil coating is golden brown. Place on paper lined tray and and put the next batch in.

Serve with lemon wedges and tartar sauce if desired.
