Introduction
This is a southern side dish that's so good. My Mom served it often with roast beef or meatloaf.
Ingredients

10 very small  new potatoes (yukon,red rose etc)
2 cups frozen petit peas
1 small bag  frozen pearl_onions
2 Tbsp butter
1 heaping tbsp flour
Salt and black pepper
About 2 cups whole milk
Sliced chives for garnish

 

Directions
Step: 1Scrub potatoe's and cut in half horizontaly . Place the potatoes in a saucepan, cover with water and 1tsp salt. Bring to a boil, then turn down to a simmer and cook until just tender. Remove rom the heat, drain and set aside.
Step: 2

In a saucepan, melt the butter. Add the flour and stir constantly over medium heat to form a paste. With a wire wisk, wisk in the milk so that no lumps remain. Cook, stirring constantly until the sauce thickens. If sauce is too thick, add a little more milkAdd salt and pepper to taste.

Step: 3Add the frozen onions and cook, stirring constantly for 8 minutes or until the onions are thawed and hot. Add frozen peas, and the boiled potatoes. Adust seasoning and stir gently. Pour into a warm serving dish and sprinkle the chives on top.
