Introduction
I keep this salad in the fridge almost all year long, or as long as there are melons in the stores. It makes a great snack when the urge for something sweet hits me and is a wonderful dessert on a hot summer day.
Ingredients

1 medium mexican papaya
1 medium cantaloupe
1 medium honeydew,
Or use any combination of melon/fruits that you like

Directions
Step: 1

Peel, seed and cube the melons into bite size chunks, or use a melon baller as shown in the picture.Pour 1 cup vanilla simple syrup over fruit and toss. Cover and chill at least one hour for best flavor.

I often use this fruit salad to make a smoothie. I take about a cup and a half of the salad with some of the juice , put it in a plastic container and toss it in the freezer. When frozen, pop the melon into the blender and add a cup and a half of your favorite juice and a banana. Blend until thick and smooth.
