Pour the coulis in a squeeze bottle and get creative. Cut plain brownies in a diamond pattern, place on a pool of strawberry coulis and top with a scoop of vanilla ice cream drizzled with the same coulis, watch your family and friends be very impressed... | | Ingredients | | 1/4 cup granulated_sugar 1/4 water 2 cups fresh raspberries , black_berries etc, rinsed and picked over. Frozen berries can also be used if fresh are not available. | | Directions | | Step: 1 | Combine the sugar and water in a medium heavy pot and bring to a boil over high heat. Reduce the heat to medium low and simmer until the sugar dissolves, about 2 minutes. Add the berries and cook, stirring occasionally, until the syrup thickens and reduces by 3/4 in volume, about 5 minutes. | | Step: 2 | Cool mixture to lukewarm.Transfer to a blender or food processor, and puree on high speed. Strain through a fine mesh strainer, pressing down with a rubber spatula to extract as much juice as possible. If the mixture is too thick, add water a teaspoon at a time to reach the desired consistency. Cover and refrigerate coulis in an airtight container until ready to use. Use within one week. |
