Introduction
I had done a big grocery shopping one day and had lots of our favorite gourmet goodies. As I was unpacking the bags, my handicapped daughter Erica began setting aside her favorite ingredients. She said she wanted to make a salad for dinner. This was really exciting for me because she is usually afraid to try and cook or make something. I lent a little help with the dressing mixing, but the rest was hers. I was soooo proud. We had it for dinner with some good bread.
Ingredients
1 medium sized romaine lettuce ,washed and outer leaves trimmed .Lay on paper towels to drain.
5 large basil leaves, sliced into strips
1/2 cup whole pitted black olives, drained
1 red bell pepper cut into rings
1 small red onion cut in thin rings
1 cup cherry tomatoes , halved
1 cup crumbled feta cheese
4 slices fresh mozzarella , cubed
6 slices salami cut into strips

Dressing:
2 tsps brine packed capers , rinsed and mashed
1/2 tsp coarsely ground black pepper
1/4 tsp sea salt
1/4 cup extra virgin olive oil
2 Tbsps balsamic vinegar
Pinch of sugar
Directions
Step: 1In a large salad bowl add washed , dried and torn greens and basil.
Add olives and remainder of veggies. At this point the salad can be covered and refrigerated until ready to serve.
Step: 2Combine dressing ingredients in a glass bowl.
First the olive oil, salt and pepper. Add balsamic vinegar and whisk to combine. Add capers, sugar and salami. Mix well.

At serving time add dressing and croutons, mix well and serve..
