Introduction
My client Jackie had me prepare this recipe for dinner today and she allowed me to post it here. It may seem like a lot of pans, but the whole thing went together so fast I was amazed. Jackie had me use ground antelope for this as her husband Rick is an avid hunter and fisherman.
Ingredients
1 lb lean ground beef -ground turkey or game meat such
as venison.
1 8 oz can tomato sauce
2 large eggs, slightly beaten
1 cup light cream
1/2 cup water
1 pkg chili seasoning mix
1 medium onion , finely diced
2 Tbsp butter
Crushed tortilla chips
1 8 oz block monterey jack cheese-cut into small cubes
1 small container sour cream .

Directions
Step: 1Preheat oven to 350 F.

 In a pre heated skillet, add ground meat and cook,
breaking the meat up as it cooks (no big lumps of meat) until no longer pink .
Set aside

In another skillet, melt the butter. Add the onions and cook
until soft. Add the tomato sauce, water and chili seasoning mix. Mix well  and simmer about 5 minutes. Set aside.

Step: 2
Butter a 2 quart casserole. Coarsely crush a large handful of tortilla chips over the bottom of the casserole. Top with a layer of meat,then a layer of sauce, then cheese.
Repeat layers until all the ingredients are used up. The last layer should be meat.
Beat the eggs with the cream and pour over the casserole, covering the meat  completely.

Spread the sour cream over the top of the egg mixture.
Bake at 350 for 30 minutes.
