Introduction
This is the Chili I made in Italy for Guido's family . I'll never forget the look on Mama's face when I asked her for a little of her dark chocolate! She thought I was crazy.
I served the chili that day with timbale's of seasoned rice in the middle.
Ingredients
1 1/2 pounds lean chili grind beef ( I grind my own with my kitchen aid)
1 cup diced white onions
1 cup small diced red bell pepper
1 tsp red pepper flakes or to taste (optional)
3 garlic cloves , finely minced
2 tsp crumpled leaf oregno
2 tsp Calif chili powder
2 Tsp New mexico chili powder
3 dried chile negro (dried pasillas)
2 Tbsp paprika
1 tsp ground cumin
2 square dark chocolate
1 tsp freshly ground black pepper
Sea_salt to taste
1 large can (2 cups with juice) diced tomatoes
2 cans of beer, lager type
1/2 of one small can tomato paste
2 cups cooked pinto or red kidney beans (canned or home cooked)
3 Tbsp butter
Directions
Step: 1Place the chiles in a dish and pour boiling water  water over them. Let them sit about an hour until soft. Remove the stems and puree the peppers with a little of the soaking water.

In a small dry skillet over medium heat , add all the seasonings excpt salt, pepper and chocolate and toast, stirring often until fragrant. Remove from the heat , add the salt and pepper. Set aside.
Step: 2In a deep pot/dutch oven saute the onions in the butter until soft.
In a large skillet, brown the meat  in batches (this keeps it from stewing in its juice) until all the meat is cooked.
Add the meat as it is cooked to the wilted onions along with the diced bell pepper.
Add the toasted spices and remaining ingredients except chocolate  to the pot and stir well to combine. 
Step: 3Simmer uncovered for two hours over medium low heat, stirring occasionally, until chili is the desired thickness. Add the chocolate and the beans the last
half hour of cooking. Adjust seasonings to taste.

Serve with crumpled ricotta salata or Queso cheese, minced cilantro and fresh warm tortilla chips.over the top.

I just looked at this recipe and realized that I completely forgot the chile negro! My sincerest apoligies to anyone who made this recipe before the change!
