"This is a typical Catalan dish... extremely easy to do, cheap and plainly delicious. Sometimes it has been translated as "ember-roasted vegetables"..."
| | Ingredients | | 2 eggplants
2 red bell pepper
2 onions
4 slices of rustic bread
Extra_virgin_olive_oil
8 oil packed anchovy fillets
1 garlic_clove (optional)
Sea_salt
Mayonnaise (optional) | | Directions | | Step: 1 | Take some eggplants, red peppers and onions, put them over embers (in this case, they were cooked in the oven) for about 1-2 hours (until their peel becomes grey-black).
Wrap them with newspaper, let them steam and cool for a while (1-2 hours, whole night, anything goes).
Peel them all, cut into small pieces and pour some olive oil and salt.
Take a toast of bread, spread some garlic mayonnaise (optional, but very recommended), put a good deal of veggies on top and a couple of anchovies on them.
Have a nice meal!
Oh, I forgot... remember to have a handkerchief nearby, just to wipe your eyes while crying with joy!
Note from Guido : If you do not have garlic mayo, brush a clove of garlic over the toasted bread just like a bruschetta.
