Italian Meatloaf

Introduction
This recipe is great hot or cold, and if you think meatloaf is bland, you haven't tasted this one. This meatloaf freezes beautifully.  Another idea is to make one meat loaf and shape the remaining mixture into meatballs. Bake them in a seperate pan along side the meatloaf, cool and freeze for another great meal. See the menu below for some great dinner ideas.
Ingredients

2 Pounds Lean Ground Beef
1 Pound ground pork
1/2 Pound frozen spinach , cooked, squeezed dry , finely chopped
1/2 Pound mushrooms, cleaned and sliced
2 Tablespoons Olive_Oil
1 Egg, Beaten
2 Cups fresh soft bread crumbs
1/2 Cup provolone_cheese , coarsly grated
2 garlic_cloves ,minced
1/2 Cup red wine
1/4 cup shredded parmesan cheese
1 Cup Cooked Ham , in very small dice or minced ( preferably prosciutto cotto (cooked proscuitto)
2 Tbsp leaf oregano (dry) or 3 Tbsp fresh
1 Tbsp leaf basil(dry) or10 large fresh leaves, minced
4 tsp sea_salt
2 teaspoons freshly ground black pepper

Directions
Step: 1

 Preheat the oven to 375 degrees F.

Sauté the mushrooms in the oil until golden. Roughly chop.
Using a large bowl, combine remaining ingredients and gently blend with your hands.

Step: 2Place in two 9 X 5 inch loaf pans. Bake for 1 hour, covering with foil if needed the last 20 minutes. Cool for 10 minutes then serve.

I only descovered Meatloaf a couple of years ago as we don't have it here in England. I will definitely be trying this, it looks great!
