Another idea is to make one meat loaf and shape the remaining mixture into meatballs. Bake them in a seperate pan along side the meatloaf, cool and freeze for another great meal. See the menu below for some great dinner ideas. | | Ingredients | | 2 Pounds Lean Ground Beef
1 Pound ground pork
1/2 Pound frozen spinach , cooked, squeezed dry , finely chopped
1/2 Pound mushrooms, cleaned and sliced
2 Tablespoons Olive_Oil
1 Egg, Beaten
2 Cups fresh soft bread crumbs
1/2 Cup provolone_cheese , coarsly grated
2 garlic_cloves ,minced
1/2 Cup red wine
1/4 cup shredded parmesan cheese
1 Cup Cooked Ham , in very small dice or minced ( preferably prosciutto cotto (cooked proscuitto)
2 Tbsp leaf oregano (dry) or 3 Tbsp fresh
1 Tbsp leaf basil(dry) or10 large fresh leaves, minced
4 tsp sea_salt
2 teaspoons freshly ground black pepper | | Directions | | Step: 1 | Preheat the oven to 375 degrees F.
Sauté the mushrooms in the oil until golden. Roughly chop.
Using a large bowl, combine remaining ingredients and gently blend with your hands.
