This is the roman style, as in many other regions of Italy this dish is baked in the oven.
We think this way is simpler, and you can use a canned tomato sauce to make it even simpler. | | Ingredients | | 8 large zucchini ( about 1 1/2 inches in diameter and about 5 inches long)
1/2 Lb ground beef
1 hamburger or hot-dog bun.
1/4 cup whole_milk
2 eggs
1 medium sized onion , diced finely
1/2 cup tomato_puree .
2 Tbsp extra_virgin_olive_oil
2 Tbsp grated Parmigiano Reggiano.
1/8 tsp sea_salt , several grinds black pepper , few scratches of fresh nutmeg | | Directions | | Step: 1 | Wash zucchini and cut off both ends.
With the coring tool, (in Italy we call it scavino) hollow zucchini.
You may want to save the pulp for making a pasta sauce as we do in Italy. | | Step: 2 | Place torn up bun in a mixing bowl and pour milk over.
Add the beef, eggs, parmigiano, salt, pepper, and nutmeg and mix well with a spoon or your hands.
Stuff the zucchini with the meat mixture. | | Step: 3 | In a pan, sauté onion with extra virgin olive oil until translucent, add the zucchini and tomato puree, diluted with a couple of tablespoons of water.
Adjust salt to taste.
Cook, covered, for 20 minutes on low heat.
If the sauce becomes too dense, keep adding a little bit of warm water.
This dish can be served cold or warm,
and reheats very good in the microwave. |

I addeda few other ingrdients- I added to the mince beef- chopped water chessnuts- to give another texture plus some red wine. and in the tomato sauce I added garlic, redwine, finley chopped chilli (love spicy food) and at the very end some Fresh torn up Basil leaves. IT WAS AMAZING!!! I served it to sopme very dear freinds of mine who are food critics and they were blown away!! I cooked it in one of those sunbeam cookers that you plug in the wall to fit all the zucchini's in at the same time. |
